1 large red onion, coarsely chopped
1 tablespoon chopped garlic
1-1/2 pounds top sirloin beef, cut into 1/2-inch
1-1/2 pounds lean pork butt, cut into 1/2-inch
1 tablespoon ground cumin
2 teaspoons salt
1 teaspoon black pepper
4 cups beef broth
2 Dried Trinidad Scorpion 7 Pot Chocolate Douglah pods, sliced with seeds
Cooking Time: 1 hr 15 min
1 teaspoon dried oregano
2 tablespoons fine cornmeal
1. In a large soup pot, heat oil over medium-high heat. Add onion and garlic, and cook 3 to 4 minutes,stirring occasionally. Stir in beef, pork, cumin, salt, and pepper, and cook an additional 5 to 6 minutes, or until meat is browned.
2. Stir in beef broth, dried Trinidad Scorpion Chocolate 7 pod Douglah, and oregano; reduce heat to medium-low and simmer. Add the fine cornmeal stir well.
3. Cover and continue to simmer over low heat 1 hour, or until meat is fork-tender, stirring occasionally.
